The nozzle aperture determines how much gas flows to the burner. A smaller aperture restricts flow; a larger aperture allows more. The correct size depends on the gas type and supply pressure.
This is the key distinction. LPG (propane/butane) is supplied at higher pressure, so it needs a smaller aperture. Natural gas is supplied at lower pressure and needs a larger aperture. Converting a stove from one gas to the other means changing the nozzles.
